Easy Peasy

I always thought that you must have an oven to bake a cake until my colleague gave this recipe. It's very easy to make. You dont have to have an oven to bake this cake, a steamer will do. Plus, saves electricity bills! Hehhehe

Mixed Fruit Steamed Cake
Ingredients:
1 bar of butter
5 eggs
1 cup of sugar
1/2 tin of condensed milk
2 cups of self raising flour (or wheat flour + bicarbonate soda)
any dried fruits e.g prunes, dates, etc (I used mixed fruits) ~ chopped roughly

Method:
Prepare the steamer
Soften the butter and whisked with sugar until fluffy.
Then, add in the eggs, whisked again
Add in the condensed milk.
Next, add in the flour and whisked.
Lastly, put in the dried fruits. Mixed well.
Steam for 1 hour.



Voila!
You can also decorate it with icing .....

Buttercream icing extracted from http://www.wilton.com/recipe/Buttercream-Icing
Ingredients:
1/2 cup solid vegetable shortening
1/2 cup (1 stick) butter or margarine softened
1 teaspoon clear vanilla extract
4 cups sifted confectioners' sugar (approximately 1 lb.)
2 tablespoons milk
Makes: About 3 cups of icing.

Instructions (Medium Consistency) :
In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.

For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using.

For thin (spreading) consistency icing, add 2 tablespoons light corn syrup, water or milk.
For Pure White Icing (stiff consistency), omit butter; substitute an additional 1/2 cup shortening for butter and add 1/2 teaspoon No-Color Butter Flavor. Add up to 4 tablespoons light corn syrup, water or milk to thin for icing cakes.

Obsession

The perfume? Hmmm niceeeee . I like!
Sorry for the digression.

I have found a new obsession : digital scrapbooking. What is digital scrapbooking? It is the same as paper scrapbooking but sans the papers, scissors, glue etc. and easy on the pocket as well ;)
But, where's the fun in it if you dont get your hands dirty , right? Bah, you know lah IT era nie, it is only make sense when you do it digitally. Wink wink wink

11th April 2005

Tick tock tick tock.
I can't believed it!

6 more days and it will be our 4th anniversary! Its like we have just gotten married only yesterday. I am running out of ideas what gift to give to dear Hubby. The fact that dear Hubby is a fussy person, is adding up to my headache. Let's see my list so far
  • Perfume , checked, given previous years.
  • Neck Tie & Cuff links , checked that one too.
  • Leather wallet, checked.
  • Shirt, also checked.
  • Watch, checked

So what's left lah? Hmmm, according to this website, they recommended to give linen or silk (Alamak! Muslim men cant wear silk. Is linen the same? I wonder) or appliances (electrical kah? eh, mahal tu~big boys toys can be quite expensive) as an ideal anniversary gift for 4th anniversary. Heee tapi macam ndak romantic and personal jak tu.

Hmmmm Scrapbook, maybe? Awaiting for creative juices to flow :p

A diamond bracelet sounds good (on me of course!). Looks like I cant ask for a diamond bracelet, not until the 60th anniversary anyway (God's willing if we live that long, I will be 93 years old that time). Besides the economic are not looking so good nowadays.

Anyway, lots of things have changed these past 4 years. Some are an eye opener and some are path to self discovery. Nevertheless, I prayed that our marriage will remain, ~not smooth (all marriage has it ups and downs), a blessed and a happy one (here and therafter).

Yes, how can this happened? I just don't understand this. Is the mom just plain dumb or what? I can just imagine the baby crying kelaparan.The baby is not even 1 month old. Apa bah nie?!!!!

Baby boy starves to death; drunk parents forgot to feed him By STEPHEN THEN


MIRI: A baby boy, less then a month old, starved to death Thursday after his parents allegedly forgot to feed him because they were too drunk. The baby died in the intensive care unit of Miri Hospital Thursday morning and a police report was lodged.


Police now want to question the parents, in their early 30s, from a longhouse in southern Sarawak who came to Miri to work and were now renting a house at a low-cost housing scheme along the Sarawak-Brunei highway some 12kms north of the city centre.

Concerned relatives had found the baby unconscious in the house and had rushed him to the hospital at about 3am on Wednesday.

Miri Deputy Police Chief Supt Ismail Paduka Idris confirmed Thursday that the baby had died in the morning. "We (police) are investigating claims that the parents had indulged in a prolonged drinking spree and had neglected the baby in the process."

"Initial probe showed that the baby might have been so severely neglected that he suffered fatal consequences. We want to find out whether this was due to carelessness or criminal neglect. "We will be taking statements from the parents and from neighbours and relatives to find out what actually happened," he said, adding that police have yet to detain the parents.

Asked if there were any signs of physical abuse on the baby, he said police are still investigating all aspects. The couple have another child, a three-year daughter.

I am so sad.
