Red Velvet
Saw a friend posted a picture of this cake in her fb and decided to goggled the recipe.
p.s. The cake looks
1 teaspoon salt
2 Tablespoons cocoa powder (unsweetened)
2 oz. red food coloring
1/2 cup unsalted butter, at room temperature
1 1/2 cups sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1 cup buttermilk, at room temperature
1 teaspoon white vinegar
1 teaspoon baking soda
1. Preheat oven to 350 degrees. Butter and flour two 9-inch round cake pans or three 8-inch round cake pans.
2. Sift together the cake flour, baking powder, and salt into a medium bowl; set aside. In a small bowl, mix food coloring and cocoa powder to form a thin paste without lumps; set aside.
3. In a large bowl, using a hand mixer or stand mixer, beat butter and sugar together until light and fluffy, about three minutes. Beat in eggs, one at a time, then beat in vanilla and the red cocoa paste, scraping down the bowl with a spatula as you go. Add one third of the flour mixture to the butter mixture, beat well, then beat in half of the buttermilk. Beat in another third of flour mixture, then second half of buttermilk. End with the last third of the flour mixture, beat until well combined, making sure to scrape down the bowl with a spatula.
4. Make sure you have cake pans buttered, floured, and nearby. In a small bowl, mix vinegar and baking soda. Yes, it will fizz! Add it to the cake batter and stir well to combine. Working quickly, divide batter evenly between the cake pans and place them in a preheated 350 degree oven. Bake for 25-30 minutes. Check early, cake is done when a toothpick inserted in the center comes out clean.
5. Cool the cakes in their pans on a wire rack for 10 minutes. To remove the cakes from the pan, place a wire rack on top of the cake pan and invert, then gently lift the pan. Allow cakes to cool completely before frosting. Frost with buttercream or cream cheese icing (recipe below).
Recipe Notes: *Sift cake flour once before measuring, then sift again with the other dry ingredients per recipe instructions. Wear an apron and be careful with the red food coloring–no matter how hard I try, I always end up staining something! As you’re mixing the cake batter, use a spatula to scrape down the bowl frequently throughout the entire process.
Cream Cheese Frosting
16 oz. cream cheese (2 packages), softened
1/2 cup unsalted butter (one stick), softened
1 teaspoon vanilla extract
2 1/2 cups powdered sugar, sifted
pinch of salt
With an electric mixer, blend together cream cheese and butter until smooth. Turn mixer to low speed and blend in powdered sugar, salt and vanilla extract. Turn mixer on high and beat until light and fluffy. Use immediately or refrigerate, covered, until ready to use. If refrigerated, the frosting will need to be brought to room temperature before using (after frosting softens up, beat with mixer until smooth).
Recipe Notes: If you prefer a sweeter and/or stiffer frosting, more powdered sugar can be added (up to four cups). But remember, the more sugar you add, the less you’ll be able to taste the tangy cream cheese

Grandma & Grandpa's Day out
On the second day, went up and stayed overnight at Genting. ~ As it was after Deepavali and its a Sunday, it was chaotic up there, especially during the check in @ First World Hotel (Yeah, that will be the 1st and the last that we will stayed there). First of all, mau check in pun mau ambil number (what???!! buruk oh this hotel) And then, we have to wait for like almost 3 hours for our number to be call !!! Sudah lah tu, there was no comfortable waiting area, instead they had chairs like the one at the hospitals, banks etc (I thought we were at the wrong place nasib baik lah ada sign board nama hotel). Nasib baik lah the rooms was kinda acceptable. As we have lost quite some hours waiting for the blardly room, didn't managed to go for the rides. Just took 2 rides at the urm twice..i forgot wat its call but Baby was so excited looking at the lights especially the big swan..
On the 3rd day, Hubby had to go for outstation~darn :(
Mom wanted to stayed at Bukit Bintang area so that will be able to done some shopping! So we've booked 2 rooms with a view @ Capital Hotel. A very nice hotel indeed. Not bad for a 3 star hotel. Planned to go for the Lake Garden sightseeing but due to some reasons, was diverted to another shopping spree @ Midvalley instead.
All good things must come to an end, with a sad heart, our last breakfast before departing for airport. Felt that the trip should be at least 2 weeks. So many places, so little time.Tuesday, October 20, 2009

Holiday here we come
In fact, had our 1st and 2nd (adakah such term hehehe?) honeymoon here... I loved it here ,well, firstly for being a duty free shopping haven (for me , that is ~ think chocolate, perfume, cookery (huh?) and clothes) and secondly, for being such a nice place, of course!
Anyway, since we are here for 3 days and 2 nites only and this is Baby's first time here , we didnt managed to do much. However, we went up on the Cable Car, had a swell feeding time at the Deer (gila, the rusa punya jinak) and Rabbit Park and visited the Waterworld.

A friend had a minor stroke this morning. I knew she had health problems but hearing the news shocked me, still.
Later, we found out that she was stressed over work and her current personal life was not helping at all, as well.
Nevertheless, everything happens for a reason. Our obstacles are what makes us strong.
I hear you dear friend, and will be there when you need me. Get well soon!
Enjoy life while you can .. to die over work is not worthwhile

A lot have happened since my last blog entry.
A close relative had passed away.
A relative had been infected with some viral flu/attack and had fits. I dont know, could it be H141, meningitis, influenza A, influenza B or leptrospirosis? The doctor wouldnt confirm which one...Thank God, everything's fine now.
Its scary with so many 'flu' type diseases thats out there waiting and waiting.....could it be a sign of the end of the world as in the Quran?
The best ever babysitter at the new nursery had left. To date, 4 babysitters have come and go in a span of 5 months. Sigh!
Its been a hectic month.

Easy Peasy
Mixed Fruit Steamed Cake
Buttercream icing extracted from http://www.wilton.com/recipe/Buttercream-Icing
Ingredients:
1/2 cup solid vegetable shortening
1/2 cup (1 stick) butter or margarine softened
1 teaspoon clear vanilla extract
4 cups sifted confectioners' sugar (approximately 1 lb.)
2 tablespoons milk
Makes: About 3 cups of icing.
Instructions (Medium Consistency) :
In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.
For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using.
For thin (spreading) consistency icing, add 2 tablespoons light corn syrup, water or milk.
For Pure White Icing (stiff consistency), omit butter; substitute an additional 1/2 cup shortening for butter and add 1/2 teaspoon No-Color Butter Flavor. Add up to 4 tablespoons light corn syrup, water or milk to thin for icing cakes.

Obsession
Sorry for the digression.
I have found a new obsession : digital scrapbooking. What is digital scrapbooking? It is the same as paper scrapbooking but sans the papers, scissors, glue etc. and easy on the pocket as well ;)
But, where's the fun in it if you dont get your hands dirty , right? Bah, you know lah IT era nie, it is only make sense when you do it digitally. Wink wink wink

So what's left lah? Hmmm, according to this website, they recommended to give linen or silk (Alamak! Muslim men cant wear silk. Is linen the same? I wonder) or appliances (electrical kah? eh, mahal tu~big boys toys can be quite expensive) as an ideal anniversary gift for 4th anniversary. Heee tapi macam ndak romantic and personal jak tu.
Hmmmm Scrapbook, maybe? Awaiting for creative juices to flow :p
A diamond bracelet sounds good (on me of course!). Looks like I cant ask for a diamond bracelet, not until the 60th anniversary anyway (God's willing if we live that long, I will be 93 years old that time). Besides the economic are not looking so good nowadays.
Anyway, lots of things have changed these past 4 years. Some are an eye opener and some are path to self discovery. Nevertheless, I prayed that our marriage will remain, ~not smooth (all marriage has it ups and downs), a blessed and a happy one (here and therafter).

Baby boy starves to death; drunk parents forgot to feed him By STEPHEN THEN
MIRI: A baby boy, less then a month old, starved to death Thursday after his parents allegedly forgot to feed him because they were too drunk. The baby died in the intensive care unit of Miri Hospital Thursday morning and a police report was lodged.
Police now want to question the parents, in their early 30s, from a longhouse in southern Sarawak who came to Miri to work and were now renting a house at a low-cost housing scheme along the Sarawak-Brunei highway some 12kms north of the city centre.
Concerned relatives had found the baby unconscious in the house and had rushed him to the hospital at about 3am on Wednesday.
Miri Deputy Police Chief Supt Ismail Paduka Idris confirmed Thursday that the baby had died in the morning. "We (police) are investigating claims that the parents had indulged in a prolonged drinking spree and had neglected the baby in the process."
"Initial probe showed that the baby might have been so severely neglected that he suffered fatal consequences. We want to find out whether this was due to carelessness or criminal neglect. "We will be taking statements from the parents and from neighbours and relatives to find out what actually happened," he said, adding that police have yet to detain the parents.
Asked if there were any signs of physical abuse on the baby, he said police are still investigating all aspects. The couple have another child, a three-year daughter.

I risked writing this here openly in the world wide web but what the heck! I know deep in my heart, even though they do not show it openly but my family will still love me regardless of what religion I have embraced or what path I have chosen. I have wronged them for not telling about my status in an honoured way. But Allah works in a mysterious way.
I read recently a friend's note in FB and I felt sorry and sad for her. She has found the 'light' but alas now lost her way. I wanted to comment on her notes but I guess that would only offend her and a lot of other people from our circle of friends and also my Christian family members. Sini pun sama, but at least sikit org yg baca my blog :P.
I don't want know to appear as an 'extremist' but what is wrong, is wrong.
For a lot of people, stuffs regarding religion are very sensitive especially for Sabahan and more so if its got to do with Islam (I know my parents are). Its strange but she seemed proud of what she had done. Its like she is proud that she had all that experiences and live to tell it to the whole wide world. But who am I to judge her ? I don't really blame her. I blame it on her desperate need of attention, mixing with the wrong kind of friends and most of all, blame it on her ex husbands who failed to guide her as they should.
I hope one day, she will see the 'light' again.

What the ......?
These past few days has been really tiring, heart aching, boring and relaxing all in one.
The biatch has been at work! She has started to ruffled a lot more other people in all wrong kinda way again. Tsk tsk tsk .... But then again, that's why she is called the biatch, ain't it? I think she is desperate to prove that she is something. Maybe its just her nature or maybe its appraisal time ? I dunno... Poor pity person...I had tried to include her in my prayers most time so that she can change to be a better person...but I just cant seemed to do it sincerely. God forgive me! And having a manager like Mr Boss who doesn't understand our work really really does NOT help at all as well. Hmm, maybe I should not bitch here about the office...opppsss
Then, the stress of moving my baby daughter to a new nursery. Its not that the current babysitter is not fine , its just that she likes to do emergency leaves and my image yang kena suffer. My boss will say that I do not know how to plan and manage things properly. Anyway, I was actually lost for words how to tell the Babysitter that Baby will no longer be going there. Alhamdullilah, she told me that she is 3 months pregnant and will due in August, so indefinitely will have to look for a different babysitter. Phew!
Today is Baby last day there. It was a touching moment, given a choice would not have sent Baby to that dodgy Nursery.... Babysitter has looked after Baby since she was small, through sickness and health..chewah! Bye Bye Babysitter..will visit you once in a while. Kesian..rindu nanti Baby kat mak angkat.
However, on a happier note, we will be flying off to Bintulu this Sunday. Yeay! What's in Bintulu, you'd say? Tried to surf for anything interesting about the place but I couldn't find anything at all worth reading from the Net. Guessed, I have to keep an open heart and an open mind. Oh well, C ya on Wednesday!

Top 5 Lies About Israel’s Assault on Gaza
The Gaza Strip is one of the most densely populated pieces of property in the world. The presence of militants within a civilian population does not, under international law, deprive that population of their protected status, and hence any assault upon that population under the guise of targeting militants is, in fact, a war crime. Moreover, the people Israel claims are legitimate targets are members of Hamas, which Israel says is a terrorist organization. Hamas has been responsible for firing rockets into Israel. These rockets are extremely inaccurate and thus, even if Hamas intended to hit military targets within Israel, are indiscriminate by nature. When rockets from Gaza kill Israeli civilians, it is a war crime. Hamas has a military wing. However, it is not entirely a military organization, but a political one. Members of Hamas are the democratically elected representatives of the Palestinian people. Dozens of these elected leaders have been kidnapped and held in Israeli prisons without charge. Others have been targeted for assassination, such as Nizar Rayan, a top Hamas official. To kill Rayan, Israel targeted a residential apartment building. The strike not only killed Rayan but two of his wives and four of his children, along with six others. There is no justification for such an attack under international law. This was a war crime. Other of Israel’s bombardment with protected status under international law have included a mosque, a prison, police stations, and a university, in addition to residential buildings. Moreover, Israel has long held Gaza under siege, allowing only the most minimal amounts of humanitarian supplies to enter. Israel is bombing and killing Palestinian civilians. Countless more have been wounded, and cannot receive medical attention. Hospitals running on generators have little or no fuel. Doctors have no proper equipment or medical supplies to treat the injured. These people, too, are the victims of Israeli policies targeted not at Hamas or legitimate military targets, but directly designed to punish the civilian population.
Lie #2) Hamas violated the cease-fire. The Israeli bombardment is a response to Palestinian rocket fire and is designed to end such rocket attacks.
Israel never observed the cease-fire to begin with. From the beginning, it announced a “special security zone” within the Gaza Strip and announced that Palestinians who enter this zone will be fired upon. In other words, Israel announced its intention that Israeli soldiers would shoot at farmers and other individuals attempting to reach their own land in direct violation of not only the cease-fire but international law. Despite shooting incidents, including ones resulting in Palestinians getting injured, Hamas still held to the cease-fire from the time it went into effect on June 19 until Israel effectively ended the truce on November 4 by launching an airstrike into Gaza that killed five and injured several others. Israel’s violation of the cease-fire predictably resulted in retaliation from militants in Gaza who fired rockets into Israel in response. The increased barrage of rocket fire at the end of December is being used as justification for the continued Israeli bombardment, but is a direct response by militants to the Israeli attacks.
Israel's actions, including its violation of the cease-fire, predictably resulted in an escalation of rocket attacks against its own population.
Lie #3) Hamas is using human shields, a war crime.
There has been no evidence that Hamas has used human shields. The fact is, as previously noted, Gaza is a small piece of property that is densely populated. Israel engages in indiscriminate warfare such as the assassination of Nizar Rayan, in which members of his family were also murdered. It is victims like his dead children that Israel defines as “human shields” in its propaganda. There is no legitimacy for this interpretation under international law. In circumstances such as these, Hamas is not using human shields, Israel is committing war crimes in violation of the Geneva Conventions and other applicable international law.
The populations of those Arab countries are outraged at Israel’s actions and at their own governments for not condemning Israel’s assault and acting to end the violence. Simply stated, the Arab governments do not represent their respective Arab populations. The populations of the Arab nations have staged mass protests in opposition to not only Israel's actions but also the inaction of their own governments and what they view as either complacency or complicity in Israel's crimes. Moreover, the refusal of Arab nations to take action to come to the aid of the Palestinians is not because they agree with Israel’s actions, but because they are submissive to the will of the US, which fully supports Israel. Egypt, for instance, which refused to open the border to allow Palestinians wounded in the attacks to get medical treatment in Egyptian hospitals, is heavily dependent upon US aid, and is being widely criticized within the population of the Arab countries for what is viewed as an absolute betrayal of the Gaza Palestinians. Even Palestinian President Mahmoud Abbas has been regarded as a traitor to his own people for blaming Hamas for the suffering of the people of Gaza. Palestinians are also well aware of Abbas' past perceived betrayals in conniving with Israel and the US to sideline the democratically elected Hamas government, culminating in a counter-coup by Hamas in which it expelled Fatah (the military wing of Abbas' Palestine Authority) from the Gaza Strip. While his apparent goal was to weaken Hamas and strengthen his own position, the Palestinians and other Arabs in the Middle East are so outraged at Abbas that it is unlikely he will be able to govern effectively.
Israel claims it sent radio and telephone text messages to residents of Gaza warning them to flee from the coming bombardment. But the people of Gaza have nowhere to flee to. They are trapped within the Gaza Strip. It is by Israeli design that they cannot escape across the border. It is by Israeli design that they have no food, water, or fuel by which to survive. It is by Israeli design that hospitals in Gaza have no electricity and few medical supplies with which to treat the injured and save lives.
